"Copeland's Culinary Eats" was established from the good home cooking I enjoyed as a child. Mom would call my siblings and I in the house when it was time to eat dinner. My parents taught me how to cook, which help catapult me even further into my endeavors. So, it is no surprise cooking and baking are my hobbies. On a more personal note, I have experience in Human Resources, management, and training. Author of two books and a licensed minister. In 2019, I took my knowledge to the next level by attending and graduating from Auguste Escoffier School of Culinary Arts in June of 2020. In addition, I obtained my SERV Safe Certification as a Certified Food Manager. My plans in early 2021 includes a continuation of my Facebook Live cooking show. In the Fall of 2021, I endeavor to own and operating a mobile 2021 food truck. This cookbook is formatted different than the typical cookbook. In most cookbooks, you will see the measurement before the item. Example: 1/2 Cup of Sugar. Nevertheless, in this cookbook, the item is first, then the measurement. Example: Sugar - 1/2 Cups. Why? I am self-diagnosed with dyslexia. I see letters, phrase, and words in reverse. Due to that fact, it became difficult to learn as a child. I became aware of this 'eureka moment' in my early twenties. So, I took it upon myself to truly focus when reading. Hear the conclusion of the matter; it is easier for me to understand a recipe better by listing the item first, then the measurement. With that being said, I hope you enjoy these recipes. Looking forward to sharing with you in the spring of 2021...Final words of encouragement to aspiring chefs; stay focus and on course during your journey regardless of the many obstacles. Do not be afraid to create out of the box and always ask questions for clarification. When life gets busy, take a breath, rest, and get back in the game. By the Time I Got to Woodstock is a look back at who I was in 1969. In this illustrated memoir, I explore "what's goin' on" in America-as filtered through the lens of a suburban teenager who was more "off the bus" than on it. I revisit the road that eventually got me to Woodstock, armed with a sketchbook and curiosity. What WAS all the fuss about? A trip to the Museum at Bethel Woods at the very end of 2017 opened the door. The resulting passion for learning more about what I missed is captured in this whimsical book for all generations. My illustrations are followed by quirky footnotes and facts, so we can all try to figure out the premise: "There's something happening here. What it is, ain't exactly clear." Maybe now it's a bit clearer.

Captain Patrick J. Brown of the FDNY had an uncanny ability to be exactly where he was needed at exactly the right time, most especially on 9/11/2001, when he perished, surrounded by scores of burn victims he was trying to evacuate from the World Trade Center.
